Tasmanian Lemon Pie
- Ingredients
- 125g butter (softened)
- 275g vanilla sugar
- 4 eggs (separated)
- 4tbs plain flower (sifted)
- 400ml milk
- 3 lemons (grated rind and juice)
- Method
- Preheat oven to 180°C.
- Cream the butter with the sugar until light and fluffy
- Beat in the egg yolks
- Add the grated rind and juice of the 2 lemons
- Add the flour and milk, a little at a time
- Whish the egg whites until stiff, and then fold into the mixture
- Pour into a greased baking dish -- the mixture should be about 5cm deep
- Cook in the oven for about 25 to 30 minutes (until slightly brown on top and obviously set but still slightly shuddery.
- Serve: warm with cream (and, if available, Will's Lemon Syrup™).
