Tasmanian Lemon Pie

Ingredients
125g butter (softened)
275g vanilla sugar
4 eggs (separated)
4tbs plain flower (sifted)
400ml milk
3 lemons (grated rind and juice)
Method
  1. Preheat oven to 180°C.
  2. Cream the butter with the sugar until light and fluffy
  3. Beat in the egg yolks
  4. Add the grated rind and juice of the 2 lemons
  5. Add the flour and milk, a little at a time
  6. Whish the egg whites until stiff, and then fold into the mixture
  7. Pour into a greased baking dish -- the mixture should be about 5cm deep
  8. Cook in the oven for about 25 to 30 minutes (until slightly brown on top and obviously set but still slightly shuddery.
  9. Serve: warm with cream (and, if available, Will's Lemon Syrup™).
